Enjoying Spring Berries

It's almost April, which means that strawberries are becoming sweeter and juicier. Although you can get berries all year round, when they are at the peak of their season, they make the best desserts. Although I love strawberries as is (or maybe dunked in some chocolate), there are tons of ways to incorporate them into frozen desserts.  If you aren't sure where to start, try making a basic strawberry ice cream. This recipe is great if you are new to making ice cream.

If you are looking for something a little more unique, try making a strawberry semifreddo. The image in the photo is a semifreddo topped with macerated berries. It is a fun frozen dessert because it doesn't take any special tools or equipment. You fold a strawberry puree into whipped cream and freeze it in a mold. You can use anything you have on hand. This one was made in individual springform pans, but you can even freeze them in coffee mugs and serve with whipped cream on top!

A third option is strawberry cheesecake popsicles. These are a sweet, creamy treat that has a way of making anyone feel like a kid again. Admit it, you love a great popsicle on a hot day. It might as well be one that is homemade with high quality ingredients that you control.
